Feedback on The Merchant, Fairmont Mumbai

I was at The Merchant, Fairmont Mumbai on 30 September 2026, and wanted to share some candid feedback after what was, in many ways, an outstanding breakfast experience.

The food spread is, in my view, number one in town. The variety, freshness and quality are exceptional. The live juice counter, sushi, gourmet eggs and live stations are world-class.

A special mention to Chef Selvam for his exceptional culinary skills and for celebrating Indian cuisine with innovation. His dosas, particularly the Avocado Dosa, were outstanding. Chef Yash was engaging and courteous, while Harsh delivered warm, attentive service and stood out as a star.

However, precisely because The Merchant has become one of Mumbai’s most talked-about luxury breakfast destinations, I feel the management should address some worrying service observations.

There was, at times, a sense of casualness and even arrogance among some staff. I deliberately will not name individuals, but have shared the details with Restaurant Manager Kuldeep. Some junior guest-facing staff appeared inadequately trained, with a lack of empathy and attention to detail. Guests should never feel taken for granted at a luxury property.

I also noticed limited senior management presence on the floor during busy periods, casual conversations at the entrance while guests waited, and an overall need for greater supervision, professionalism and service discipline.

The positive part was that Kuldeep listened patiently, empathised and assured me he would take this up with the team. We also happened to discuss a disappointing experience at Fi’lia at Roswyn Mumbai the previous evening, which made me wonder whether service standards and SOPs across the group need renewed attention.

I am consciously not naming the staff who disappointed me. My intention is not to embarrass anyone, but to flag something that could become a cultural issue if left unattended.

I have left my business card with Kuldeep and am happy to discuss this further if useful.

Success should never lead to complacency. The moment a team starts believing “we are the best”, the smallest details of guest experience can suffer. The best luxury brands remain humble, hungry and relentlessly attentive.

The Merchant has something genuinely special — exceptional food, ambience and potential to set a benchmark in Mumbai. I trust the management will take this feedback in the spirit intended and act quickly.

I will certainly return soon — and will be looking even more closely at the details!

Merchants at Fairmont is the kind of place where you look at the spread and think, okay, there is definitely something here for everyone.

The variety is impressive, without feeling like food has been put out simply to prove there is a lot of it. Plenty of choice, well done and something to keep everyone happy — which, frankly, is no small achievement when a table has different tastes and dietary restrictions.
But what stood out even more was the staff. They genuinely go above and beyond.

I was particularly touched when they made a maida roti specially for me. And then came hot chocolate made with lactose-free milk. These may sound like small things, but when you have food intolerances, someone remembering and making the effort feels anything but small.

Good food gets you to a restaurant. Thoughtful service makes you remember it.
Merchants definitely got that memo. And yes, I ate my maida roti with the quiet satisfaction of someone who has finally found a restaurant that speaks her dietary language. 😄

An Exceptional Dining Experience with Chef Salim Qureshi
I had an absolutely wonderful experience at Merchant, Fairmont, and a huge part of that was thanks to Master Chef Salim Qureshi. Chef Salim’s passion, attention to detail, and dedication to his craft truly stood out. Every dish was beautifully presented and, more importantly, full of incredible flavour. You can really feel the thought and care that goes into the food, and it made the entire dining experience feel special. What impressed me just as much was the warmth and hospitality. Chef Salim went above and beyond to make sure everything was perfect, and his passion for creating a memorable experience for guests really shows. A big thank you to Chef Salim Qureshi and the entire team at Merchant for such a fantastic evening.
